Graviera Cheese of Crete

Graviera Kritis is one of the most well-known and beloved Greek cheeses, awarded Protected Designation of Origin (PDO) status in 1996. It is produced exclusively in Crete from sheep’s milk or a mixture of sheep’s and up to 20% goat’s milk. The name “Graviera” is a derivation of the Swiss cheese “Gruyère,” named after the town of Gruyères. While both cheeses follow a similar aging process, they differ in flavor and composition, as Graviera is made exclusively with sheep or mixed sheep and goat milk, while Gruyère is made with cow’s milk. There are various types of Graviera produced in Greece, and it is the second most popular cheese after feta. Cretan Graviera is made from sheep’s milk and aged for at least five months. A distinctive feature is the cross-shaped imprints on its rind from the cloth used during draining. It has a slightly sweet flavor with a pleasant roasted aroma.
