The sesame ring bread also called koulouri Thessalonikis’ is a trademark product found in every bakery. Although it does not have a protected designation of origin, it became established under the name “koulouri Thessalonikis’” because it was first made in Thessaloniki by refugees who came from the lost homelands.
Its history dates back to the time of the Byzantine Empire, with appearances mainly in Constantinople and Thessaloniki. The word “koulouri” derives from the Byzantine term “kollykion,” which is mentioned in many Byzantine texts.
